One-Pot Mushroom Pasta

Try a super simple way to cook pasta and minimise your washing up, with our One-pot Mushroom Pasta recipe. It may sound like pasta sacrilege, but you won’t regret trying this one. Flat mushrooms bring an earthy flavour, with aromatic herbs and a creamy sauce making this a comforting dish for a family dinner. It’s also a great recipe to batch cook for lunch portions. Al dente means ‘to the tooth’ in Italian – meaning your pasta should still have a slight bite to it. The best way to make sure your pasta is al dente (not too soft, not too hard) is to try a piece of spaghetti or fettuccine as you cook it. Looking for more pasta recipes? Look no further.

Ingredients

  • 85 g of onion, finely chopped
  • 30 g of butter
  • 225 g of flat mushrooms, sliced
  • 1 squeeze of organic lemon juice
  • 3 tbsp of chopped flat-leaf parsley
  • 1 tsp of thyme leaves
  • 0.5 tbsp of chives, chopped
  • 2 tbsp of marjoram, chopped
  • 900 ml of vegetable or chicken stock
  • 125 ml of double cream
  • 300 g of fettuccine or spaghetti
  • 30 g of parmesan, freshly grated

Method

  • Step 1

    Melt the butter in a 25cm/3.2L casserole dish until it foams. Stir in the onion, cover with a lid and sweat over a gentle heat for 5-10 mins until soft but not coloured. Remove the onion to a bowl.
  • Step 2

    Cook the sliced mushrooms in the hot casserole dish until slightly golden; do it in batches if necessary. Season each batch with salt, pepper and a squeeze of lemon juice. Add the onion back to the dish, together with 1tbsp of parsley and the thyme and marjoram. Pour in the stock and cream, bring to the boil and simmer for 3-4 mins. Season to taste.
  • Step 3

    Add the pasta, stirring to separate the strands and prevent it from sticking, and boil for 4 mins. Then turn off the heat and allow the pasta to stand, tightly covered with a lid, for 4-5 mins or until it is al dente.
  • Step 4

    Sprinkle with the remaining parsley and the grated parmesan. Taste and add a little more lemon juice, if necessary, then serve.
