Ingredients
- 2 tbsp of mayonnaise
- 3 slices of ham
- 1 small of aubergine, chargrilled
- 1 egg, hardboiled
- 12 slices of bread, a mixture of white, wholemeal, and granary
- 2 tbsp of dijon mustard
- 1 handful of mixed salad leaves
- 4 slices of mozzarella
- 4 lemon, juiced
- 4 servings tomato
- 4 servings cooked peeled prawns
Method
Step 1
Mix the mayonnaise and mustard together in a bowl. Cut the egg, aubergine, mozzarella, lemon, and tomato into slices on a board and spread with the mayonnaise.Step 2
Top 3 slices of bread with ham, sliced egg, and a few salad leaves. Divide the prawns between 3 slices with a lettuce leaf and a slice of lemon to squeeze over. Finally layer the aubergine, mozzarella, and tomato slices and place each stack on the remaining bread slices.Step 3
Top with leaves, season to taste with salt and pepper, then transfer to a serving platter and let everyone help themselves.
