If you’re watching your sugar intake, you don’t need to miss out on scrumptious dishes. You can bake your own orange and pistachio cake with natural sweetener instead of refined sugar. The flavour combination of zesty orange and nutty pistachio makes this light cake a must-bake treat. It’ll sweeten any occasion, even if you just fancy a slice with a cup of tea. Serve with a brush of apricot jam and a sprinkle of pistachios.

Ingredients

  • 125 g of butter
  • 3 eggs
  • 190 g of plain flour
  • 2 tbsp of baking powder
  • 100 g of cornmeal
  • 1 orange, zested and juiced
  • 60 g of pistachios, finely chopped
  • 125 g of natural yoghurt
  • 4 tbsp of reduced sugar apricot jam, to serve
  • 135 g of natvia sweetener

Method

  • Step 1

    Preheat oven to 175°C and grease a cake or tart pan.
  • Step 2

    Cream the butter until light and fluffy.
  • Step 3

    Add the Natvia and further paddle until well combined.
  • Step 4

    Slowly add in the eggs.
  • Step 5

    Add the flour, baking powder, cornmeal, yogurt, orange zest, and juice and mix until well combined.
  • Step 6

    Pour into prepared pan and bake for 30 minutes and it is golden brown and toothpick comes out clean.
  • Step 7

    Before serving, brush with melted apricot jam and sprinkle with pistachios if desired.
