
Orange Melon and Elderflower Gin Slushie

Honey & Co founders Sarit Packer and Itamar Srulovich created this Orange Melon and Elderflower Gin Slushie. Either make a small round of this sunshine-ready frozen cocktail or double the recipe for an easy party pitcher that’s perfect for warm-weather gatherings. Allow 2 hrs to freeze the melon chunks. Ingredients
- 400g orange melon flesh (approx. 1 melon), cut into large chunks
- 160ml gin or vodka
- 1 lime, zested and juiced, plus a wedge
- 60ml elderflower cordial
- 2 tbsp demerara sugar
Method
Step 1
Freeze the melon chunks for at least 2 hrs. Pop in 4 freezer-safe margarita glasses at the same time to get nice and cold.Step 2
In a high-speed blender or food processor, blitz the frozen melon until smooth. Add 8 ice cubes, the gin, lime juice and cordial, then blitz again until smooth.Step 3
Working fast, mix the sugar, lime zest and a generous pinch of sea salt flakes in a shallow dish. Run a lime wedge around the outer edge of each glass rim. One at a turn the glasses upside down, dip the rim into the sugar-lime mix and twist to coat – the sugar will stick. Divide the slushie between glasses and serve immediately.
