Oreo Cookie Bars

These blondies start with a buttery sugar cookie-like dough that is packed with crushed Oreo cookies. The dough has a hint of vanilla flavour to it, but it is a relatively plain base. This allows the chocolate and vanilla cream of the Oreo cookies to come through and gives the bars the same flavour that you would find in a batch of cookies and cream ice cream!

Ingredients

  • 200 g of soft light brown sugar
  • 170 g of plain flour, sifted
  • 0.5 tsp of baking powder
  • 2 eggs, beaten
  • 60 g of white chocolate
  • 120 g of salted butter, melted
  • 0.5 tsp of vanilla bean paste
  • 154 g of oreo cookies, crushed
  • 100 g of milk chocolate

Method

  • Step 1

    Preheat the oven to 325°f, gas mark 3, 160°C
  • Step 2

    Line a 8x8 inch baking square non-stick tin with parchmnet paper.
  • Step 3

    Melt the butter and when cooled add the beaten eggs with the vanilla paste.
  • Step 4

    Add the sugar and gradually fold in the plain flour, and baking powder, taking care not to over mix.
  • Step 5

    Fold in the broken Oreo cookies.
  • Step 6

    Place the batter in the prepared tin, smoothing the top with a spatula.
  • Step 7

    Bake in the preheated oven for about 20 minutes remove from the oven when the top is set and lightly browned. Leave to cool for 1 hour.
  • Step 8

    Melt both chocolates, then smooth the milk chocolate over the top, then drizzle the white chocolate.
  • Step 9

    Refrigerate the cake for 1 hour to set the chocolate, then cut into 16 slices, removing the edges. Enjoy!
