
Orzo, Bean and Basil One-pot

A comforting vegetarian one pot that’s sure to make it into your midweek repertoire. The creamy orzo is baked with warming veg-packed tomato sauce and hearty cannellini beans to create a mouth-watering stew. Serve topped with fragrant basil for a simple veggie bake or alongside plant-based ‘meatballs’ or crispy breaded chicken breast for an Italian-inspired extra. Looking for more Quick Fire Dinners. Ingredients
- 1 (340g) jar m&s classic tomato everything sauce
- 500 ml of vegetable stock
- 1 onion, finely chopped
- 250 g of orzo
- 1 (400g) tin cannellini beans, drained and rinsed
- 1 small handful of basil, leaves picked
Method
Step 1
Preheat the oven to 220°C/ 200°C fan/ gas 6. Fry the onions in a casserole dish for 10 mins until softened.Step 2
Stir through the orzo, Everything Sauce, stock, season and stir. Transfer to the oven and bake for 15 mins, stirring halfway through.Step 3
Stir in the cannellini beans and return to the oven for 5 more mins until the orzo is cooked through. Sprinkle with basil to serve.
