Sticky, glossy, and impossibly savoury - these chicken wings are exactly what we want when the craving hits. The smokey honey marinade creates a glaze that clings beautifully to the meat. No barbecue necessary (though if it's summer and you'd like to fire yours up, don’t let us stop you!). If you can, marinate the wings overnight - it makes all the difference to the depth of flavour. This marinade works just as well with lamb or pork chops, or even chunks of paneer for a vegetarian version.

Ingredients

  • 1 kg chicken wings
  • 1 jar Ottolenghi Smokey Honey marinade
  • ¾ tsp fine sea salt
  • 7 spring onions, thinly sliced in rounds (60g)
  • lime wedges, to serve

Method

  • Step 1

    Preheat the oven to 220°C/200°C fan/gas 7.
  • Step 2

    Add the chicken to a large parchment-lined tray along with the marinade, 75ml of water and ¾ teaspoon of salt. Mix well, making sure the wings are in a single layer, and roast for 45 minutes until slightly charred and the sauce has thickened.
  • Step 3

    Scatter over the spring onions and serve with a squeeze of lime.
