
Oven-baked cod loin with pepper, tomato and olive sauce

Ingredients
- 1 ocado red onion, peeled and cut into half moons
- 800 g of ocado cherry vine tomatoes, soaked in boiling water for 2 minutes, then peeled and chopped
- 2 tbsp of tomato purée
- 180 g of black olives
- 55 g of wild rocket
- 3 tbsp of extra virgin olive oil
- 1 clove of ocado garlic, peeled and crushed
- 2 ocado romano peppers, deseeded and cut into strips
- 700 g of ocado cod loin, cut into 4 pieces
Method
Step 1
Preheat the oven to 180C/160F/Gas 4. In a large pan, sauté the garlic, onion and peppers in the olive oil for 5 minutes until they start to soften. Add the tomatoes, purée and olives. Cover and simmer for 15 minutes then season to taste.Step 2
Meanwhile, put the cod on a foil-lined oven tray, drizzle with olive oil and grind over some black pepper. Bake for 12-15 minutes, depending on thickness.Step 3
Serve the fish with the sauce and a scattering of rocket.
