
Oven Baked Sausages with Tomatoes, New Potatoes & Olives

This easy all-in-one dinner will be a new family favourite. Bell peppers, new potatoes and cherry tomatoes give this sausage supper a boost of vegetables and vitamins – for an even healthier version, you can use vegetarian sausages. Ingredients
- 12 pork sausages
- 800 g of cherry tomatoes, halved
- 650 g of new potatoes, cut into 2cm chunks
- 125 g of pitted black olives
- 3 romano peppers, deseeded and sliced
- 25 g of fresh basil, leaves picked
- 125 g of pitted green olives
- 1 tbsp of balsamic vinegar
Method
Step 1
Preheat oven to 200°C/180°C fan/gas 6.Step 2
Put the tomatoes, olives (including the oil they are in), peppers, potatoes and balsamic vinegar into a large, deep, ovenproof baking dish. Mix everything together and cook in the oven for 20 mins.Step 3
While the vegetables are cooking, brown the sausages in a frying pan with a tiny drizzle of oil, turning frequently for around 12 mins.Step 4
Season to taste and stir through the fresh basil leaves.
