
Over the Rainbow Yoghurt Lollipops

Who said you can’t have lollipops for breakfast? Definitely not us and this recipe from family cook Claudine Boulstridge couldn’t be easier. These deliciously colourful yoghurt lollipops are easy to make and will brighten up your Mother’s Day morning in hardly no time at all. Ingredients
- 1 handful of strawberries or raspberries, cut into small pieces
- 1 handful of pomegranate seeds
- 1 handful of kiwi, cut into small pieces
- 1 handful of pineapple, mango or satsuma, cut into small pieces
- 1 handful of blueberries
- 8 tbsp of thick kefir yoghurt or greek yoghurt
- 1 handful of purple grapes, halved
Method
Step 1
Spread the yoghurt into four circles, about 5mm thick (2 tbsp for each circle) on a large baking tray lined with baking paper. You can use two smaller trays if necessary, just make sure they fit your freezer.Step 2
Arrange the fruit in rainbow lines, sticking to the colour order of purple, blue, green, yellow, orange then red.Step 3
Place the top of a cake pop stick (see Tip) into the yoghurt and freeze overnight (or for at least 4 hours).Step 4
Remove from the freezer and allow to sit for 5-10 mins before carefully lifting off the baking paper and enjoy nibbling the cold, colourful rainbow.
