
Overnight chia jam on seeded toast

Ingredients
- 400 g of frozen raspberries
- 3 tbsp of honey
- 2 tbsp of chia seeds
- 1 slice of high-protein seeded bread, to serve
Method
Step 1
Take the defrosted berries and add the honey. Mash with a potato masher until the mix is fairly smooth. You can use a blender, but we like ours a bit chunkyStep 2
Stir in the chia seeds, tip into a jar and leave in the fridge overnight to absorb the juices and thicken the mixture to a jam-like consistency. You can speed this process up a little by heating the mixture in a saucepan for 5 mins and leaving to coolStep 3
Serve on seeded toast with butter – the jam will keep in the fridge for up to a week
