Make mornings sweeter by prepping
these Overnight Oats with Mixed Berries and Walnuts the night before. The
combination of oats, dried apricots and nuts is sure to keep you going until
lunch, and registered nutritionist Anita Bean suggests adding 1tbsp chia seeds
at the same time as the oats, followed by a splash more milk, for a protein

Ingredients
- 40 g of oats
- 75 ml of fat-free greek yoghurt, plus extra to serve
- 75 ml of milk
- 1 tsp of honey
- 3 dried apricots, chopped
- 100 g of fresh or frozen mixed berries, plus a few extra fresh berries to scatter (optional)
- 4 walnut halves
- 1 tsp of cacao nibs
Method
Step 1
Mix the oats, yoghurt, milk, honey and apricots in a bowl or large jar. Top with the berries, then the walnuts. Cover the bowl or jar; pop in the fridge overnight (the oats keep like this for up to 24 hrs).Step 2
In the morning, remove from the fridge – the oats will have absorbed all the liquid. Serve with an extra spoonful of yoghurt, and a scattering of cacao nibs or chocolate chips and extra fresh berries on top, if you like.
