
Oyster Mushrooms with Blue Cheese Sauce

This recipe makes for a delicious side dish, but also works perfectly as a toast topping for a quick lunch or comforting and fuss-free dinner – especially on a chilly day. Alternatively, try it tossed with pasta for a more substantial meal. To make it vegetarian, try swapping the gorgonzola for a different blue cheese that doesn't include animal rennet. Ingredients
- 100 g of gorgonzola, cut into cubes
- 50 ml of double cream
- 1 tbsp of olive oil
- 250 g of oyster mushrooms
- 2 cloves of garlic, finely chopped
Method
Step 1
Heat the oil in a large frying pan and cook the mushrooms over a medium heat for 5 mins to soften.Step 2
Add the garlic and cook for another couple of mins, then stir in the cheese and cream and cook until the cheese has melted and the sauce is thickened. Season and serve as tapas, on top of toast, or toss with pasta.
