Ingredients
- 140 g of padron peppers, (around 20 pieces)
- 200 g of cooking chorizo, (Cut into 20 chunky pieces)
- 1 sprinkling of sea salt
- 1 spoon of garlic mayonnaise, (to serve)
Method
Step 1
Soak 10 wooden skewers beforehand to stop them catching under the grill. Heat grill to medium-high.Step 2
Thread 2 whole peppers and 2 pieces chorizo (cut side facing outwards) onto each skewer.Step 3
Grill, turning often, until blistered, about 8 mins. Sprinkle with sea salt and serve with a bowl of confit garlic mayo on the side for dipping.
