The Paloma is a fresher, lesser-known cousin to the classic Margarita.
This version by Oren Coleman, group bar manager at Ottolenghi’s Rovi restaurant,
can be scaled up for a crowd –or make a batch to keep chilled in the fridge. Just

Ingredients
- 1 lime
- 1 sprinkle of sea salt flakes
- 50 ml of olmeca altos 100% agave plata tequila
- 50 ml of pink grapefruit juice
- 10 ml of agave syrup, (optional)
- 100 ml of soda water
- 1 pink grapefruit wedge
Method
Step 1
Slice the lime in half and rub the rim of a tumbler or high ball glass with one half. Juice the other half of the lime; set aside.Step 2
Dip the lime-rimmed glass in the sea salt flakes.Step 3
Pour all the liquid ingredients, including the lime juice, into the glass. Leave out the agave syrup if you prefer it more sour.Step 4
Add ice cubes to fill the glass to the top. Stir to mix, and garnish with a wedge of pink grapefruit.
