
Pan Fried Scallops with Lime and Honey Dressing

The sweet and sour yogurt dressing complements the scallops really well. A great starter or main course.Time and servings

Ingredients
- 1 tbsp of olive oil
- 200 g of spinach leaves, washed
- 8 scallops
- 1 sprinkle of chilli flakes
- 1 lime, zested and juiced, for the dressing
- 2 tsp of runny honey, for the dressing
- 2 tbsp of yeo valley whole milk natural yogurt, for the dressing
Method
Step 1
Sprinkle the scallops with the chilli flakes and black pepper. Heat the oil in a frying pan and cook the scallops for 1 minute each side until just cooked through and slightly browned on the outside.Step 2
Warm the lime rind and juice with the honey and yogurt in a pan and cook the spinach in a pan with a tight fitting lid until just wilted - around 2 minutes.Step 3
Place the wilted spinach onto plates, top with the scallops and then spoon over the yogurt dressing. Serve.
