The sweet and sour yogurt dressing complements the scallops really well. A great starter or main course.

Ingredients

  • 1 tbsp of olive oil
  • 200 g of spinach leaves, washed
  • 8 scallops
  • 1 sprinkle of chilli flakes
  • 1 lime, zested and juiced, for the dressing
  • 2 tsp of runny honey, for the dressing
  • 2 tbsp of yeo valley whole milk natural yogurt, for the dressing

Method

  • Step 1

    Sprinkle the scallops with the chilli flakes and black pepper. Heat the oil in a frying pan and cook the scallops for 1 minute each side until just cooked through and slightly browned on the outside.
  • Step 2

    Warm the lime rind and juice with the honey and yogurt in a pan and cook the spinach in a pan with a tight fitting lid until just wilted - around 2 minutes.
  • Step 3

    Place the wilted spinach onto plates, top with the scallops and then spoon over the yogurt dressing. Serve.
