
Paprika Dusted Seabass with Peppers and Tomatoes

Ingredients
- 3 tbsp of plain flour
- 1.5 tbsp of paprika
- 150 g of cherry tomatoes
- 3 tbsp of olive oil
- 2 tbsp of parsley, chopped
- 4 sea bass fillets
- 2 red, 2 yellow and 1 green pepper, deseeded and sliced
Method
Step 1
Preheat the oven to 200°C/Gas 6.Step 2
Place the peppers in a roasting tin and drizzle over 2 tbsp of the oil, toss to mix. Cook in the preheated oven for 25 minutes then stir through the cherry tomatoes and cook for a further 10 minutes until the tomatoes are hot and the skins have split.Step 3
While the tomatoes are cooking, heat the remaining oil in a large frying pan. Mix the flour and paprika together and use to dust the fish fillets.Step 4
Fry the fish for about 5-6 minutes turning halfway through.Step 5
Stir the parsley through the roasted peppers and tomatoes and then serve with the fish fillets and crusty bread.
