
Passion Fruit Chocolate Pots

These passion fruit chocolate pots from food writer John Gregory-Smith are a super easy pud, and made in just 15 mins. Rich dark chocolate is mixed with creamy coconut and fresh passion fruit juice for a tropical inspired twist. Ingredients
- 3 passion fruits, halved
- 150g dark chocolate, chopped into small pieces
- 400ml coconut cream
- 8 medjool dates, pitted
Method
Step 1
Set a sieve over a bowl and scrape the seeds out of the passion fruit into the sieve. Mix and muddle the seeds in the sieve with a spoon to get as much juice as possible into the bowl below. Discard the seeds and set the juice aside for later.Step 2
Tip the chocolate into a heatproof mixing bowl and set aside.Step 3
Pour the coconut cream into a pan set over a medium heat and bring to the boil. Remove from the heat and pour over the chocolate. Leave for 1 min to melt the chocolate and then gently mix together with a whisk or spatula.Step 4
Tip the dates into a blender, pour over the chocolate mixture and passion fruit juice then blend until you have a lovely smooth, thick mixture. Take care when you are blending with the hot chocolate.Step 5
Divide the chocolate mix between four glasses and pop them into the fridge to firm up for 2 hrs. Remove from the fridge 10 mins before serving so they can come to room temperature.
