Ingredients

  • 500 ml of passata, ideally organic
  • 2 tsp of dried chilli flakes, optional
  • 1 rosemary sprig
  • 1 sprig of thyme, optionla, to season
  • 250 g of lasagne sheets, fresh
  • 3 tbsp of extra virgin olive oil
  • 2 large of garlic cloves
  • 1 can of chickpeas, drained
  • 200 ml of vegetable stock

Method

  • Step 1

    Bring a large pot of salted water to the boil.
  • Step 2

    In the meantime, heat the oil with the crushed and peeled garlic, the chilli and the rosemary in a large saucepan. You can leave the chilli out if you prefer.
  • Step 3

    When fragrant, remove the rosemary and add the drained chickpeas.
  • Step 4

    Cook for about 5 minutes, stirring occasionally.
  • Step 5

    At this point, add the tomato passata and the stock, cover, and bring to a gentle simmer.
  • Step 6

    Cut the lasagne sheets in irregular strips - the longest should be about 1 inch.
  • Step 7

    Boil in salted water for 3 minutes, drain and add to the saucepan with the chickpea sauce.
  • Step 8

    Let the liquid thicken for about 5 minutes, Remove, season to taste. and serve with fresh thyme and a drizzle of good olive oil.
