
Pea, Courgette and Feta Fritters

Perfect finger food for a buffet or with drinks. For an ideal accompaniment, serve with tzatziki.Time and servings

Ingredients
- 80 g of plain flour
- 1 tsp of baking powder
- 1 medium of egg, beaten
- 100 ml of milk
- 75 g of petit pois, defrosted
- 75 g of courgette, grated
- 100 g of feta cheese, crumbled
- 1 tsp of dill, roughly chopped
- 5 tbsp of sunflower or light olive oil, for frying
- 2 spring onions, finely sliced
- 1 tsp of parsley, roughy chopped
Method
Step 1
Whisk together the flour and baking powder in a large mixing bowl and season with salt and pepper.Step 2
Make a well in the centre and pour in the egg and about half of the milk.Step 3
Whisk, gradually drawing the dry ingredients into the egg and milk to make a batter. If the batter is too thick, whisk in more of the milk until the batter is the consistency of double cream.Step 4
Stir in peas, courgette, feta, herbs and spring onions.Step 5
Heat a non-stick frying pan over a medium heat, add about 2 tsp of oil and, when hot, drop in 1 tbsp batter. Fry on each side for 2-3 mins, until golden.Step 6
Repeat with the remaining batter. The fritters can be kept warm in the oven for up to 30 mins before serving.
