Pea and Ham Fritters

Make lunchtimes more exciting with these super simple, yet totally delicious, pea and ham fritters. The word ‘fritter’ derives from the late latin ‘frictura’ meaning “to fry”– which is exactly how these lunchtime treats are made. Peas and succulent cooked ham are brought together in a batter infused with garlic, onion and lemon zest, before being fried to perfection. Serve them with your favourite sweet pickle or relish.

Ingredients

  • 1 tsp of olive oil
  • 1 small red onion, finely chopped
  • 4 garlic cloves, finely chopped
  • 250 g of self-raising flour
  • 300 ml of whole milk
  • 1 egg, whisked
  • 250 g of frozen peas
  • 150 g of ham, diced
  • 0.5 tsp of lemon zest
  • 2 tbsp of vegetable oil, for frying
  • 4 salad onions, thinly sliced, to garnish

Method

  • Step 1

    In a frying pan over a medium heat, add the olive oil, onions and garlic and fry for 3 mins then set aside.
  • Step 2

    Sift the self-raising flour into a large mixing bowl,add in the milk and egg and whisk together thoroughly, ensuring there are no lumps and the batter is smooth.
  • Step 3

    Add the peas, ham, cooked onion and garlic, lemon zest, 1 tsp sea salt and 1 tsp coarse black pepper and mix together well.
  • Step 4

    Add the vegetable oil to a large frying pan over a medium heat and spoon 4 large tablespoons of your fritter batter into the pan. If you don’t have a pan big enough, do it in batches of 2 or 3. Cook on both sides for 4 mins until golden brown, then set aside on a kitchen towel and repeat the process until all of the fritters have been cooked.
  • Step 5

    Garnish with sliced spring onion and your favourite sweet pickle.
