
Peach and Raspberry Layers

This throw-together pud is simple and healthy, but packed with luscious flavours. Peaches and raspberries make a classic combo, but the pairing of creamy yogurt and nutty oats makes it extra special.Time and servings

Ingredients
- 25 g of plain flour
- 25 g of demerara sugar
- 25 g of whole almonds
- 1 can of peaches
- 25 g of butter
- 25 g of oats
- 1 punnet of raspberries
- 250 g of greek yoghurt
- 1 tsp of caster sugar
- 1 tsp of vanilla essence
Method
Step 1
Rub the butter into the flour and oats, then stir in the demerara sugar and almonds. Sprinkle over a baking sheet and cook in the preheated oven for 12-15 minutes until golden and crisp. Leave to cool.Step 2
Place the peaches in a bowl and pour over boiling water to cover, leave for 1-2 minutes then drain. Pull away the peach skin and discard, chop the flesh.Step 3
Place half the chopped peaches in a blender and puree. Stir the the rest of the chopped peaches through the raspberries. Stir the peach puree through the yoghurt along with the caster sugar and vanilla essence.Step 4
Spoon some of the peach and raspberry mixture into 4 glasses, top with some of the yoghurt mixture followed by some of the almond and oat crumble. Continue this process until all used up, finishing with a sprinkling of the crumble. Serve.
