
Peach, Manchego and Serrano Ham Salad

full of colour and texture,” says Spanish chef and cookbook author Omar Allibhoy, who
created this Peach, Manchego and Serrano Ham Salad. “I’ve used yellow peaches (my mum’s
favourite!), which are super sweet and make a lovely contrast to the ham and red onion, but

Ingredients
- 3 tbsp light olive oil
- 3 slices serrano ham, roughly chopped
- 2 tbsp pine nuts
- ½ red onion, sliced
- 3 tbsp sherry vinegar
- 1 tbsp runny honey
- 4 tbsp spanish extra-virgin olive oil
- 6 (approx.) peaches, destoned and cut into wedges
- 50g manchego, shaved with a vegetable peeler
Method
Step 1
Heat the light olive oil in a frying pan over a low heat. Fry the ham and pine nuts for 5 mins or until crispy and golden. Remove from the heat.Step 2
Stir in the onion, vinegar and honey. Cool, then stir in the extra-virgin olive oil with a pinch of salt.Step 3
Spread out the peaches on a serving platter and spoon over the serrano and onion mixture. Scatter over the manchego and serve.
