
Peach Tommy’s Margarita

Ingredients
- 4 ripe, juicy peaches, roughly chopped
- 4 tsp agave (or to taste)
- 200ml tequila blanco
- 100ml lime juice (approx. 4 limes), squeezed limes reserved
- 2 tsp sea salt flakes, optional (for the rim)
- 1 pinch ground aleppo pepper, optional (for the rim)
Method
Step 1
Blitz the peach and agave in a blender with a few tsp water (adjust as needed to get the right consistency) until super smooth. Pour through a fine-mesh strainer. You should have 200ml peach juice.Step 2
Put into a cocktail shaker with the tequila, lime juice and some ice; shake well.Step 3
If you want a salted glass rim, sprinkle some salt onto a plate (spike it with aleppo pepper for a kick). Rub a juiced lime around the glass rim, then dip into the salt.Step 4
Strain the cocktail into your glass over ice and serve immediately.
