
Peanut Butter 'Ice Cream'

This two-ingredient ice cream alternative is great for vegans. It's quick to make – keep some peeled ripe bananas in your freezer and you'll be able to whizz this together whenever you have a craving for something sweet. To keep this recipe completely vegan, serve with maple syrup or agave nectar instead of honey.Time and servings

Ingredients
- 4 bananas, frozen
- 1 tbsp of peanuts, chopped
- 1 drizzle of honey(optional)
- 3 tbsp of peanut butter
Method
Step 1
Chop 4 frozen bananas into chunks and pop them into a blender.Step 2
Whizz until the mixture starts to come together, then add 3tbsp natural peanut butter and continue to blend until it forms a smooth consistency. You may need to scrape down the sides a couple of times.Step 3
You can eat the ice cream immediately topped with 1tbsp chopped peanuts and a drizzle of honey, or transfer it back into the freezer for an hour or so for a more solid set.
