
Peanut Butter Banana Bread

Peanut butter and banana are breakfast best friends, so why not bake them together in a cake? Super simple this is a recipe you could leave the kids in charge of and everyone will be asking for more. Freezing overripe bananas is the no-waste hack we didn’t know we needed, great in this or stirred through pancake batter. Time and servings

Ingredients
- 130g butter, softened
- 160g golden caster sugar
- 2 tsp vanilla extract
- 2 large eggs
- 4 tbsp peanut butter, plus extra to drizzle
- 2 bananas, defrosted
- 250g self-raising flour
- 2 tbsp milk
- 2 tbsp demerara sugar
Method
Step 1
Heat the oven to 170°C/ 150°C fan/ gas 3 ½. Grease and line a 900g loaf tin.Step 2
Put the butter, sugar and vanilla in a mixing bowl, or bowl of a stand mixer, and beat for 3-4 mins until light and fluffy.Step 3
Add the eggs, peanut butter and bananas then beat until well combined.Step 4
Tip in the flour with a pinch of salt then fold until fully combined. Scrape into the tin and sprinkle over the demerara sugar, bake for 1 hr until a skewer inserted comes out clean.Step 5
Leave to cool then remove from the tin and drizzle with extra peanut butter. Slice to serve.
