Ingredients

  • 2 tbsp smooth peanut butter
  • 1 tbsp red miso
  • 1 tbsp maple syrup
  • 1 tbsp groundnut or vegetable oil
  • 1 tsp ginger and garlic paste
  • 500g chicken mince
  • 1 tbsp soy sauce
  • 3 (250g) nests noodles of your choice
  • 2 pak choi, leaves separated
  • ½ lemon (optional)
  • 2 tbsp chopped peanuts (optional)
  • 2 salad onions, sliced (optional)

Method

  • Step 1

    Mix the peanut butter, red miso and maple syrup in a bowl with 3 tbsp hot water until runny and smooth. Set aside.
  • Step 2

    Heat the oil in a large pan or wok over high heat. Add the ginger and garlic paste, fry for 1 min, then add the chicken mince. Cook for 5 mins (approx.), stirring occasionally, until cooked through and starting to catch. Add the soy with 1 tbsp of the peanut-miso sauce and toss to coat.
  • Step 3

    Meanwhile, soak the noodles in boiling water for 3 mins (approx.) to soften. Drain well, then toss with the remaining peanut-miso sauce until well coated.
  • Step 4

    Add the pak choi to the pan of mince; stir-fry for 2 mins (approx.) until just wilted. Tip in the dressed noodles and toss everything together over the heat until warmed through. Add a squeeze of lemon, if you like.
  • Step 5

    Divide between bowls and top with the chopped peanuts and salad onions, if using.
