
Pear and blue cheese salad

This sophisticated salad can be enjoyed as a light meal, starter or side
dish. The sweet pears contrast deliciously with the rich, creamy blue

Ingredients
- 2 tbsp of cider vinegar
- 1 tsp of dijon mustard
- 50 g of pecan nuts
- 4 tbsp of olive oil
- 4 slices of white bread
- 150 g of salad leaves
- 125 g of blue cheese
- 4 pears, cored and sliced
Method
Step 1
Toast the pecans in a dry pan for 5 minutes. Set aside to cool.Step 2
Whisk together the oil, vinegar and mustard, and season to taste.Step 3
Toast or grill the bread, then place a slice in each plate. Pile with the salad leaves and pear, then drizzle over the dressing. Finally, crumble on the cheese and top with the nuts.
