Created by nutritionist and author of Hungry Woman Pauline Cox, this mouthwatering treat will also boost your intake of healthy fats. “Pecans and peanut butter both contain unsaturated fat – replacing saturated with unsaturated fats can help maintain normal cholesterol levels.” You can also turn it into a family-friendly pud – just chop into pieces and layer it up with greek yoghurt.

Ingredients

  • 2 medium bananas, sliced into 1 cm discs
  • 2 tbsp crunchy peanut butter
  • 50g natural pecans
  • 50g dark chocolate, melted and cooled

Method

  • Step 1

    Line a tray with baking paper. To make a base, arrange the banana slices in a rectangle on it and freeze for 30 mins.
  • Step 2

    Remove from the freezer and dollop over the peanut butter, smoothing it out with a knife. Return to the freezer for 30 mins.
  • Step 3

    Meanwhile, set aside a few whole pecans and whizz the rest in a blender to a chunky crumb.
  • Step 4

    Remove the banana-peanut base from the freezer; spoon over half the melted chocolate, then half the crumb; repeat. Break up the whole nuts and press into the chocolate on top; freeze for 10-15 mins.
  • Step 5

    Break into shards and enjoy on demand from frozen. Store frozen in an airtight container for up to 1 month.
