
Pecan Pie Raw Cookies

Ingredients
- 100g pecans
- 200g pitted dates
- 125g porridge oats
- 1 tsp ground cinnamon
Method
Step 1
Pulse the pecans in a food processor until finely chopped, then scoop out 2tbsp and set aside on a small plate. Add the dates and porridge oats to the processor, along with the cinnamon and 3tbsp water. Whizz until finely chopped and starting to stick together – if it looks a little dry, add another tsp of water.Step 2
Roll the mixture into 15 evenly sized balls, then squish into patties. Press the tops into the plate of chopped nuts, to finish.
