Ingredients
- 4 tablespoons of olive oil
- 3 tablespoons of oregano
- 400 g of chopped tomatoes
- 1 sprinkle of parmesan, to serve
- 1 tsp of thyme
- 3 tsps of dried basil
- 3 cloves of garlic, crushed
- 1 courgette, diced
- 1 red pepper, diced
- 1 onion, diced
- 2 handfuls of black pitted olives, chopped
- 500 g of penne
- 1 handful of fresh basil
- 4 tablespoons of rubies in the rubble spicy tomato relish
Method
Step 1
Heat the oil in a large pan and add the oregano, thyme, dried basil, garlic, courgette, pepper and onion. Cook until soft.Step 2
Add the chopped tomatoes and 4 tablespoons of Spicy Tomato relish. Simmer for 10 minutes.Step 3
Add the olives.Step 4
While the sauce is simmering, cook the penne, according to the instructions.Step 5
Mix the pasta and sauce together and serve with fresh basil leaves and parmesan.
