Ingredients
- 140 g of smoked salmon
- 6 eggs
- 1 lemon
- 2 plain bagel
- 15 g of unsalted butter
Method
Step 1
Arrange the salmon on two plates. Squeeze some lemon juice and black pepper over the top. Get the bagels ready to toast.Step 2
Crack the eggs into a jug. Prick the yolks to burst, but do not beat. Melt the butter in a small pan over a low heat.Step 3
When the butter has melted, season (with salt and pepper) and pour in the eggs. Allow the eggs to cook for a few seconds and then stir gently and keep stirring the whole time the eggs are cooking. Start toasting the bagels just before you start the eggs.Step 4
When the eggs are set and as you like them, serve them on a toasted bagel with the salmon and a wedge of lemon.
