
Persian-Style Potato Salad

Ingredients
- 500 g of new potatoes, boiled, still firm
- 100 g of petits pois, cooked
- 3 spring onions, finely chopped
- 8 cornichons, finely chopped
- 4 eggs, hardboiled, peeled and diced
- 100 ml of mayonnaise
- 4 tbsp of white wine vinegar
- 2 tbsp of extra virgin olive oil
Method
Step 1
Add the potatoes, peas, cornichons, spring onions and boiled eggs to a large bowl.Step 2
Whisk the mayonnaise, vinegar, olive oil and some salt and pepper together, before gently folding into the salad. Leave to chill and serve.Step 3
