This easy Pesto Egg Mayo Sandwich is a great way to elevate your lunch. Bright, creamy and packed with flavour, the filling also makes a tasty toast topper and is delicious in a wrap.

Ingredients
- 6 large eggs
- 2 tbsp crème fraîche
- 1 tbsp pesto
- 6 slices focaccia or bread of your choice
- 2 tbsp crispy onions (optional)
- 2 handfuls watercress (optional)
Method
Step 1
Cook the eggs in boiling water for 10 mins, then plunge into an ice bath; peel.Step 2
Chop and mix with crème fraîche, salt and pepper, then ripple in the pesto.Step 3
Spread on sliced focaccia and sandwich with crispy onions and watercress, if you like.
