Ingredients

  • 1 dessert spoon olive oil
  • 120 g of cooked frozen prawns
  • 200 g of light philadelphia
  • 20 g of cheddar cheese, finely grated
  • 600 g of potatoes, peeled and cut into pieces
  • 1 onion, peeled and finely chopped
  • 1 tsp of dried mixed herbs
  • 600 g of fish pie mix, remove any bones
  • 75 ml of semi skimmed milk

Method

  • Step 1

    Cook the potatoes in boiling water until soft.
  • Step 2

    Meanwhile heat the oil in a large non stick frying pan. Add the onion & herbs and cook gently until the onion is soft but not browned.
  • Step 3

    Add the fish (but not the prawns yet) to the frying pan and heat until the fish is just cooked through. Add the Philly and prawns, stirring over the heat until the Philly has melted and heated up to almost boiling.
  • Step 4

    Gradually add the milk to give a nice creamy sauce.
  • Step 5

    Season to taste, then spoon the mixture into a pre-warmed ovenproof dish.
  • Step 6

    Drain & mash the hot potatoes. Use to top the fish mixture.
  • Step 7

    Sprinkle with grated cheese and place under a hot grill until the cheese has melted and browned.
  • Step 8

    Serve with seasonal vegetables or a green salad.
