When it comes to nifty party nibbles, things on sticks are hard to beat! These Pibil Brussels Sprouts with Bacon Party Bites are the brainchild of Missy Flynn and Gabriel Pryce – the duo behind cult London restaurant Rita’s. “We began with inspiration from the Yucatan’s pork and peppery achiote combo (here used in a zesty pibil coating) and brought in beautiful British sprouts. Roasting makes them sweet and succulent – delicious with crispy bacon.”

Ingredients

  • 200g brussels sprouts
  • 1 tsp olive oil, for greasing
  • 1 pack (184g) dry-cured smoked streaky bacon
  • 2 tbsp Las Chicas Pibil Cooking Paste
  • 1 pinch sea salt
  • 2 limes, cut into wedges for squeezing

Method

  • Step 1

    Preheat the oven to 200°C/180°C fan/gas 4. Blanch the sprouts in a pan of boiling, salted water for 3 mins; drain and instantly plunge into a bowl of ice water (to keep them green). Drain, then cut each in half.
  • Step 2

    Meanwhile, grease a baking tray with the oil. Lay the bacon on it; set aside.
  • Step 3

    In a large roasting tin, toss the sprout halves in the pibil; roast for 10 mins. Add the bacon to roast alongside for 8 mins or until crispy (keep an eye on it). Remove both and leave to cool a little, then cut the bacon into bite-size pieces.
  • Step 4

    Take approx. 8 cocktail sticks and thread the sprouts and bacon alternately onto them until everything is used up. Sprinkle with sea salt and serve with lime wedges for squeezing over.
