
Pickled Peaches

Delicious with roast ham and cheeses, or in toasties with
gouda. A great offering to take to Christmas lunch if you’re a guest.Time and servings

Ingredients
- 120 g of soft brown sugar
- 2 small of cinnamon sticks
- 1 heaped tsp of whole cloves
- 1 heaped tsp of whole allspice
- 525 g of brindisa peach halves
- 6 tbsp of cider/white wine vinegar
- 1 dried chilli
Method
Step 1
Drain the syrup from the jar of peaches into a small saucepan and stir in the sugar, vinegar, spices and chilli.Step 2
Bring slowly to the boil, stirring to dissolve the sugar.Step 3
Simmer gently for 3 mins, add the peaches and 50ml water, and bring to simmering point once again.Step 4
Leave simmering gently for a further 5 mins, before removing from heat. Pour into a heatproof bowl and leave to cool. Store in a jar, we used Kilner Universal Storage Jar, 0.85L. Keep in the fridge and use within 5 days.
