Pigs in Blankets Autumnal Galette

A super quick no fuss tart. This autumnal galette is a great way to celebrate the season. Sweet Apple and Squash work so well with The Jolly Hog Great Taste award winning Pigs in Blankets.  Perfect to be served as a speedy lunch, sharer, or a warming autumn evening dinner and squeezes in two of your five a day.

Ingredients

  • 150 g of cream cheese
  • 75 g of blue cheese
  • 1 320g pre-made shortcrust pastry
  • 1 egg, lightly beaten
  • 25 g of pecans
  • 4 sprigs of thyme
  • 1 squash, cut into 6 slices
  • 1 apple, sliced
  • 8 the jolly hog pigs in blankets

Method

  • Step 1

    Preheat the oven to 200°C/180°C fan/gas 6.
  • Step 2

    In a bowl, combine the cream cheese, blue cheese and season with black pepper.
  • Step 3

    Roll the pre-made pastry out on a lightly floured surface, cut into a rough 30cm circle and place on a baking tray lined with baking paper.
  • Step 4

    Spread the cream cheese mixture on the pastry circle leaving a 3cm boarder. Add the squash and apple slices on top of the cheese then place on the pigs in blankets.
  • Step 5

    Fold up the side of the pastry to roughly enclose the tart and form the classic galette shape. Brush the pastry edges with egg and place in the oven to bake for 15 mins.
  • Step 6

    Remove the galette from the oven, sprinkle over the pecans and return to the oven for a final 5 mins until the galette is golden and crisp and the pecans are toasted.
  • Step 7

    Remove from the oven, sprinkle with fresh thyme and serve.
