
Pineapple and Mezcal Highball

For a tropical treat, try this Pineapple and Mezcal Highball from master mixologist and bar manager Sasa Ruvidic. “Ride the mezcal wave with this low-effort highball – smoky, earthy and more complex than tequila. Ingredients
- 1 tbsp Tajin Chilli and Lime Seasoning
- 1 lime, juiced to give 1 tbsp, 1 wedge sliced off for the glass rim
- 40ml mezcal
- 40ml coconut water
- 1 tbsp agave nectar
- 150ml (approx.) pineapple soda, for topping up
Method
Step 1
To make the half-asymmetric rim, sprinkle the Tajin onto a saucer. Rub the lime wedge along a diagonal section of the highball glass, then dip into the Tajin to coat.Step 2
Combine the mezcal, coconut water, agave nectar and lime juice in a cocktail shaker or clean lidded jar. Add some ice and shake for 20-30 secs to chill.Step 3
Fill the prepared glass with ice, then strain in the cocktail and top up with pineapple soda. Garnish with a pineapple leaf, if you like.
