Ingredients

  • 250ml pink prosecco
  • 4 tsp lemon juice
  • 250g strawberries, halved, plus 4 sliced or diced to garnish
  • 1 tbsp caster sugar
  • 1 small handful mint, leaves picked (optional)
  • 1 handful M&S Edible Viola Flowers (optional)

Method

  • Step 1

    For the granita, combine the prosecco and lemon juice in a lidded, freezer-safe container; freeze for 8 hrs or ideally overnight.
  • Step 2

    Preheat the oven to 180°C/160°C fan/gas 4. Put the halved strawberries in a roasting tin and sprinkle with the caster sugar. Cover tightly with foil and roast for 10 mins. Remove from the oven and set aside to cool fully, leaving the foil cover intact.
  • Step 3

    To serve, divide the roasted strawberries between glasses, reserving a few to garnish. Break up the granita with a fork and spoon it over the strawberries. Garnish with the remaining roasted strawberries, the fresh sliced or diced ones, plus the mint leaves and violas, if liked.
