
Piri Piri chicken burger with lime mayo & avocado

Ingredients
- 2 limes, zest of 2 limes and juice of 1 lime
- 1.5 tbsp of chipotle paste
- 4 small chicken breasts
- 4 ciabatta buns
- 1 tomato, sliced
- 1 handful of rocket
- 2 red chillies, finely chopped
- 1 handful of fresh parsley, finely chopped
- 1.5 tbsp of red wine vinegar
- 2 tbsp of olive oil
- 1 avocado, sliced
- 1 handfull of fresh coriander
- 4 tbsp of mayonnaise
Method
Step 1
First make the piri piri sauce: combine 2 red chillies, a small handful of parsley, both finely chopped, zest of 2 limes and juice of 1 lime, 1½tbsp chipotle paste, 1tbsp red wine vinegar, 2tbsp olive oil and seasoning.Step 2
Put 4 small chicken breasts between 2 pieces of cling film and bash with a rolling pin to an even thickness of 1.5cm. Place the chicken into the spicy sauce and marinate for up to 30 mins.Step 3
Cook over medium coals (with extra marinade spooned over) for 2-3 mins each side, or until cooked through.Step 4
Slice on an angle and serve in toasted ciabatta buns with sliced avocado, tomato, a little coriander, rocket and a dollop of mayo mixed with lime zest and black pepper.
