
Piri Piri Chicken

Punchy piri piri is balanced with cooling, creamy coleslaw and sweet potato in this simple but flavour-packed recipe. Using some handy premade ingredients like piri piri marinade and frozen chips really takes the effort out of the prep. This is a stress-free recipe to serve four and is sure to become a family favourite. Time and servings

Ingredients
- 500 g of sweet potato chips
- 4 chicken breasts
- 1 pack of piri piri marinade
- 300 g of coleslaw
- 10 g of coriander, roughly chopped
- 1 lemon, cut into wedges
- 4 spring onions, shredded into lengths
- 2 tbsp of chilli flakes, optional
Method
Step 1
Use a sharp knife to slice the top of the chicken breasts every centimetre (be careful not to cut all the way through). Marinate the chicken in the piri piri marinade, following the packet instructions.Step 2
Preheat oven to 200°C/180°C fan/gas 6. When it's ready to cook, add the chicken into a roasting tin. Line another roasting tin with baking paper and tip the sweet potato chips in, making sure they're spread out. Pop everything into the hot oven for 20-25 mins, giving the chips a shake half way through. Check that the chicken is cooked all the way through before removing.Step 3
Remove everything from the oven and stir the coriander through the coleslaw. Serve each chicken breast alongside the sweet potato chips and the slaw. Scatter over the shredded spring onion and finish with a squeeze of lemon and an extra sprinkle of chilli flakes, if you want it really spicy.
