Pitta Bread Pizzas and Crunchy Coleslaw

Cheese grated, tomatoes washed and Pig is so excited he can't stop doing the Running Man.  These delicious pizzas and the colourful coleslaw are so easy to make, you'll whip them up in the blink of an eye. Ingredients

  • 1 tin of chopped tomatoes
  • 1 handful of cress
  • 1 apple
  • 1 handful of pumpkin seeds
  • 1 handful of sunflower seeds
  • 1 tbsp of mayonnaise
  • 3 wholemeal pitta bread
  • 6 small of handfuls cheddar cheese, grated
  • 2 handfuls of red cabbage
  • 1 small onion
  • 1 carrot

Method

  • Step 1

    Cut the pitta breads in half & lay on a baking tray.

  • Step 2

    Put a spoonful of the chopped tomatoes on each half & spread over the pitta bread.

  • Step 3

    Sprinkle a small handful of cheese onto each pitta & flatten down with the back of a spoon to stop it falling off!

  • Step 4

    Place the baking tray under a medium grill for about 5 mins or until the cheese is all bubbly & brown.

  • Step 5

    For the coleslaw: peel & grate the carrot & apple & place in a bowl.

  • Step 6

    Chop the cabbage & onion into small pieces & add to the bowl.

  • Step 7

    Add your mayonnaise to the bowl & mix well.

  • Step 8

    Decorate by sprinkling with cress and the pumpkin and sunflower seeds.

  • Step 9

    Dollop the coleslaw on top of your pitta pizzas. Delicious!
