
Ingredients
- 1 tsp of olive oil, plus extra for the tomatoes
- 2 slices of of sourdough bread
- 3 tomatoes, sliced into rounds
- 1 lemon, juiced
- 2 balls of burrata
- 2 tbsp of parmesan, grated
- 4 tbsp of napoletana sauce
- 2 tsp of red onion chutney
- 1 basil sprig
Method
Step 1
Preheat the oven to 200°C/180°C fan/gas 6.Step 2
Heat the oil in a large frying pan over medium-high heat and fry the bread slices on each side until golden.Step 3
Season the tomato slices with the lemon juice, a pinch of salt and coarsely ground black pepper, and a drizzle of olive oil.Step 4
Tear the burrata into bite-size pieces and arrange them on the toasted bread. Layer the tomatoes on top and sprinkle with 1 tbsp of the parmesan cheese.Step 5
Transfer to a baking tray lined with baking paper and bake in the oven for 5-7 mins until the cheese begins to colour and melt.Step 6
Meanwhile, in a small pan, heat the napoletana sauce until just simmering.Step 7
Spoon the sauce over the toast, then dollop over the red onion chutney, scatter over a few basil leaves and sprinkle over the remaining parmesan. Bake in the oven for another 3 mins and serve immediately.
