
Plant-based Chorizo and Tomato Bowls with Sourdough

A quick midweek winner using mostly store cupboard ingredients. The simple tomato stew is topped with smoky plant-based chorizo for a seriously flavourful, easy meal.Time and servings

Ingredients
- 1 tbsp extra virgin olive oil, plus extra for brushing and drizzling
- 1 red onion, finely chopped
- 1 garlic clove, crushed or grated
- 1 x 400g tin chopped tomatoes
- ½ tsp granulated sugar
- 4 slices sourdough
- 100g pack Squeaky Bean Cooking Chorizo Style Sausage
Method
Step 1
Heat 1 tbsp olive oil in a pan over a medium heat. Add the onion and garlic and cook, stirring often, for 5-7 mins or until softened.Step 2
Add the chopped tomatoes and sugar to the pan. Simmer for 5-10 mins, stirring frequently, until the sauce has thickened slightly. Season with salt and pepper.Step 3
Meanwhile, heat a griddle pan over a medium heat. Brush the sourdough slices on both sides with a little olive oil and griddle for 1-2 mins each side, or until char marks appear. Remove and set aside.Step 4
Slice the chorizo-style sausage at an angle. Add to the hot griddle pan and cook for 1-2 mins on each side until browned and crisp.Step 5
To serve, divide the tomato mixture into bowls. Top with the cooked chorizo slices, drizzle with a little extra virgin olive oil and serve with the griddled sourdough.
