
Plum & Halloumi Skewers with Tahini Dressing

Sweet plums and salty cheese go beautifully

Ingredients
- 250 g of halloumi
- 6 plums, halved
- 1 dash of rapeseed oil
- 6 tbsp of tahini
- 1 lemon
- 100 ml of water
- 1 clove of garlic, crushed
- 1 tbsp of honey
- 20 g of fresh coriander, leaves very finely chopped
- 0.5 tsp of sea salt
Method
Step 1
If you’re using wooden skewers, soak four in water while you prepare the ingredients.Step 2
Mix all the dressing ingredients together in a bowl and set aside for the flavours to develop.Step 3
Chop the halloumi into 12 large chunks. Thread the halloumi and plum halves onto the skewers, alternating as you go – there should be 3 pieces of halloumi and 3 halves of plum on each one.Step 4
Preheat your griddle pan (or barbecue) to high while you brush the skewers with rapeseed oil and season with pepper.Step 5
Lay them into the hot pan and lightly char for around 3-4 mins on both sides – keep them still if you want the nice stripes!Step 6
Remove from the heat and serve right away with the tahini dressing drizzled over the top.
