Ingredients

  • 300 g of cod loin (any firm white fish will work equally well)
  • 200 ml of whole milk
  • 60 ml of white wine
  • 1 lemon, halved
  • 4 garlic cloves, finely chopped
  • 1 tsp of whole black peppercorns
  • 25 g of unsalted butter
  • 25 g of plain flour
  • 2 tbsp of grated cheddar cheese
  • 1 handful of flat-leaf parsley, leaves only, finely chopped
  • 0.5 tsp of english mustard

Method

  • Step 1

Preheat the oven to 180°C/160°C fan/gas mark 4. Place the cod loin in a baking dish. Add the milk, wine, 1 tsp of the sea salt, ½ the chopped garlic, all of the black peppercorns and lemon. The liquid doesn’t need to cover the fish entirely.
  • Step 2

Cover with foil and place in the oven for 20 mins. Remove from the oven and set aside, leaving the dish covered to keep warm.
  • Step 3

In a hot pan, melt the butter, then add in the flour, mixing together with a wooden spoon to form a roux. Strain the fish poaching liquid through a sieve into the pan and mix well. Add the cheese, 1 ½ tsp salt, ½ tsp coarse black pepper, parsley, mustard and remaining garlic then bring to a boil for 1 min. Reduce the heat to a simmer for 5 mins or until the sauce has thickened.
  • Step 4

Serve immediately with mashed potatoes and your favourite green vegetables.
