Ingredients

  • 4 chicken breasts
  • 3 red peppers, finely sliced
  • 3 tbsp of garlic cloves, peeled and sliced
  • 300 ml of chicken stock
  • 150 ml of white wine
  • 150 ml of parsley, roughly chopped
  • 6 tbsp of olive oil

Method

  • Step 1

    Butterfly the chicken breasts. Pop them in a bowl and season them generously with salt, pepper and 4 tbsp olive oil.
  • Step 2

    Heat a frying pan over a medium-high heat. Add 2 tbsp olive oil, then get the chicken in the pan. Sear it for a couple of minutes on each side, then remove it from the pan and set aside until later.
  • Step 3

    Add the peppers and garlic to the chicken pan and cook them for 10 mins until softened. Add half of your stock to deglaze the pan, scraping the bottom with the spoon to lift off all the caramelised bits.
  • Step 4

    Add the remaining stock and white wine into the pan, then bring to a gentle simmer. Put the chicken back in the pan and cook it for 2 mins. Flip it over and cook for another 2 mins. By this time, the sauce should be beautifully reduced.
  • Step 5

    Season to taste with salt and pepper, then sprinkle with chopped parsley and serve.
