Pomegranate, orange & tahini quinoa salad

Ingredients

  • 10 g of pistachios, chopped
  • 100 g of quinoa
  • 4 oranges, small
  • 1 pomegranate, seeds of, roughly 100g
  • 25 g of parsley, chopped
  • 2 tsp of soy sauce
  • 4 tsp of white wine vinegar
  • 0.5 tbsp of honey
  • 0.25 tsp of salt
  • 1 clove of garlic, crushed
  • 3 tbsp of tahini
  • 8 carrots, small, peeled
  • 1 tbsp of lemon juice

Method

  • Step 1

    Cook quinoa as per pack instructions and set aside to cool.
  • Step 2

    Meanwhile, use a peeler to slice the carrots into ribbons and place in a large bowl.
  • Step 3

    Peel each orange and remove the pith, then slice into rounds.
  • Step 4

    Add to the bowl with the pomegranate seeds, parsley and quinoa.
  • Step 5

    Next, spoon the dressing ingredients (tahini, soy sauce, white wine vinegar, lemon juice, honey, salt , garlic clove) into a jar and shake well.
  • Step 6

    Toss all the salad ingredients together and serve with the dressing and pistachios on top.
