
Pomegranate and Chia Pudding

This pomegranate and chia pudding has a thick layer of creamy chia seeds soaked in oat milk, topped with a spoonful of sweet (yet tart) pomegranate seeds. For added flavour, there’s pomegranate molasses stirred into the pudding. And let’s not forget the cocoa nibs topping for a chocolatey and crunchy finish. Made with in-season seeds, this pomegranate chia pudding is the perfect healthy, vegan and gluten-free breakfast or dessert.Time and servings

Ingredients
- 300 ml of oat milk
- 2 tbsp of pomegranate molasses
- 100 g of chia seeds
- 80 g of pomegranate seeds
- 2 tsp of cocoa nibs
Method
Step 1
Place the milk in a medium bowl with the pomegranate molasses and whisk to combine. Stir in the chia seeds and mix well. Let sit for 15–20 minutes, stirring every 5 minutes to keep lumps from forming.Step 2
Once the pudding is thickened, divide equally between 4 glasses and top each with pomegranate seeds, cocoa nibs and an extra drizzle of pomegranate molasses if you wish.
